Ingredients
- 1 cup peas (fresh or frozen, thawed)
- 1 cup baby spinach (or other leafy green)
- 1/4 cup fresh basil leaves
- 2 tablespoons fresh parsley
- 2–3 asparagus stalks, blanched and chopped (optional)
- 2 tablespoons nuts (pine nuts, walnuts, almonds, or cashews — or sunflower seeds for nut allergies)
- 2 tablespoons grated parmesan (less or skip for babies under 1)
- 2–3 tablespoons olive oil
- 2–4 tablespoons water or milk, to thin
Instructions
The beauty of this recipe is that it requires zero brainpower for tired parents! Simply throw everything in a blender or blend it all up with an immersion blender and blend everything until smooth. Adjust liquid to desired consistency and you are done!
This green pesto will keep in an airtight container in the fridge for 3 to 4 days. Or Simply pour it into i ce cube trays and freeze for a super simple freezer meal that pairs great with veggies, pasta, rice a dip for crackers or anything really!
