2. Add the cream cheese. Add your block of cream cheese to the food processor and blend until everything is combined and the mixture starts forming one giant ball. That’s your sign it’s ready.
3. Roll into balls. I like to use about 2 tablespoons of mixture per ball. Roll the mixture into even-sized balls. If you’re using 2 tablespoons per ball, you should get around 20 truffles.
4. Chill. Place your rolled balls onto a parchment-lined baking sheet and pop them in the fridge for about 30 minutes to firm up.
5. Dip and decorate, quickly! Take the truffles out of the fridge and dip them in melted candy melts. Just keep in mind that because these are cold, the candy melts will harden up fast, so you’ve got to decorate quickly! Add your candy eyes, spooky sprinkles and any fun Halloween candy while the coating is still wet.
