Carrot Salmon Nuggets for Toddlers (Air Fryer + Freezer Friendly)
Easy air fryer salmon nuggets for toddlers with hidden carrots and a crunchy oat crumb. Healthy, freezer friendly and perfect for baby-led weaning!
Let me tell you a secret. If you put salmon on a plate and call it “salmon,” my toddlers will look at you like you just served them a sock. But shape that exact same salmon into a little golden nugget, roll it in a crunchy oat crumb, put a dip next to it and suddenly it’s the best thing that has ever happened to them! These salmon nuggets for toddlers are basically a magic trick, and the best part is they’re secretly loaded with carrots too.
As a former chef (and a mom of two who has negotiated with more tiny dinner critics than any job ever threw at me) I wanted a nugget that was simple, actually healthy and didn’t need a deep fryer or a full afternoon. So these are made with cooked flaked salmon, soft mashed carrots and a crispy oat coating, and they come out of the air fryer golden in about 10 minutes. No added salt, perfect for baby-led weaning, and they freeze like a dream so you can stash a bag for those nights when dinner is just not happening. Which, let’s be honest, is most nights!
Why You'll Love These Salmon Nuggets for Toddlers
- Fish, but make it fun. The nugget shape does all the heavy lifting here. Kids who won’t touch a salmon fillet will happily dunk these in ketchup and ask for more.
- Hidden carrots, zero suspicion. The mashed carrot melts right into the salmon so all they see is a crunchy golden nugget, and all you see is a veggie win.
- Real food, simple ingredients. Salmon, carrots, oats, an egg and a few pantry spices. That’s it! No mystery fillers like the ones in the freezer aisle.
- Air fryer easy. Golden and crispy in about 10 minutes with just a spritz of oil, no deep frying and no splattered stovetop.
- Freezer friendly. Freeze them before or after cooking and cook straight from frozen. Future you will want to send present you flowers.
- Baby friendly from 9 months. No added salt, a soft texture inside and an easy shape for little hands to grab.
- A genius way to use leftover salmon. Made salmon for the grown-ups last night? Flake the leftovers and you’re halfway there.

Ingredients for Healthy Salmon Nuggets
Here’s a quick look at what goes into these nuggets and why (the full measurements are in the recipe card below):
- Salmon: The star of the show! Use fresh salmon you cook yourself, leftover cooked salmon, or even canned salmon if you want to skip a step. Salmon is packed with omega-3s, protein and vitamin D, and it’s one of the lowest mercury fish around, which makes it a great pick for little ones.
- Carrots: Cooked until super soft and mashed, they add natural sweetness, moisture and a sneaky serving of veggies. Baby carrots totally work here (12 to 15 of them is about the same as 2 medium carrots) and there’s no peeling involved, which is my favorite kind of veggie prep.
- Egg: The glue that holds everything together.
- Oat flour: This is just rolled oats blended until they’re fine and powdery like flour! It binds the mix and soaks up any extra moisture from the carrots. No need to buy a special bag.
- Garlic powder and onion powder: Loads of flavor without any added salt.
- Lemon zest: A little bit of brightness that makes salmon taste extra fresh (and a lot less fishy, which is a big deal for suspicious toddlers).
- Rolled oats (for the crumb): Pulsed just a few times so they stay coarse and crunchy. This is our healthy swap for breadcrumbs!
- Ground flaxseed: Adds even more omega-3s and fiber to the coating and helps it get golden.
- Parmesan (optional): For a little cheesy, savory crunch.
- Smoked paprika: Gives the nuggets a gorgeous golden color and a mild, toddler-friendly flavor. Don’t worry, it’s not spicy!
How to Make Air Fryer Salmon Nuggets
1. Cook the salmon. Air fry your salmon at 390°F for 8 to 10 minutes or bake it at 400°F for 12 to 15 minutes until it flakes easily. Let it cool slightly, then flake it with a fork, pull off the skin and run your fingers through it to check for any sneaky bones.
2. Cook the carrots. While the salmon cooks, steam or boil your carrots for 10 to 12 minutes until they’re super soft. Medium carrots get peeled and sliced first, baby carrots can go in just as they are. Mash them until smooth and let them cool down.
3. Make the oat crumb and oat flour. Pulse ¾ cup of rolled oats in your blender or food processor a few times until coarse and crumbly, then tip them into a shallow bowl and mix in the flaxseed, Parmesan and paprika. Now add ½ cup of rolled oats to the blender and blend for 30 to 60 seconds until fine like flour, then measure out ⅓ cup. One blender, two jobs, very few dishes!
4. Mix it all together. Add the flaked salmon, mashed carrot, egg, oat flour, garlic powder, onion powder and lemon zest to a bowl and mix until combined. The mixture should hold together when you press it. If it feels too sticky, add a little more oat flour, 1 tablespoon at a time.
5. Chill. Pop the bowl in the fridge for 15 minutes. This firms everything up and makes shaping so much easier (perfect time to wipe a face or find a missing shoe).
6. Shape and coat. Scoop about 1 tablespoon of the mixture, shape it into a little nugget and press it into the oat crumb until coated all over.
7. Air fry. Arrange the nuggets in a single layer in your air fryer basket, give them a light spray of oil and air fry at 390°F for 8 to 10 minutes, flipping halfway, until golden and set. Let them cool for a few minutes and watch them disappear!
Tips for the Best Salmon Nuggets
Cook the carrots until they’re really soft. You want them mashing like butter so there are no chunks for eagle-eyed toddlers to spot and pick out.
Let everything cool before mixing. Hot salmon and carrots can start cooking the egg before the nuggets even hit the air fryer, so give them a few minutes.
Don’t skip the chill. I know, I know, nobody has 15 spare minutes. But it really does make the mix so much easier to shape and helps the nuggets hold together.
Wet hands are your friend. Dampen your hands a little while shaping and the mixture won’t stick to your fingers.
Don’t overcrowd the air fryer. Give the nuggets a little space so the hot air can get all the way around them. Cook in batches if you need to, crowded nuggets steam instead of crisp.
Spray, don’t pour. A light mist of oil is all you need for that golden crunch.
Are Salmon Nuggets Good for Babies and Toddlers?
Yes! These salmon nuggets are a fantastic finger food for the whole family, from babies starting solids all the way up to the grown-ups. Salmon is one of the best fish you can give little ones because it’s rich in omega-3 DHA for growing brains, and it’s naturally low in mercury. There’s no added salt in this recipe either, so you can serve the nuggets straight from the air fryer and season the adult portions at the table.
For babies doing baby-led weaning, shape the mixture into finger-length strips instead of nuggets so they’re easy to grab and hold. For younger babies, you can break a nugget up and mash it a little with a fork. Parmesan does contain some sodium, so for babies under 12 months you can leave it out or keep portions modest. This recipe contains fish, egg and dairy (if using the Parmesan), so make sure those have been introduced first. As always, serve food in a size and texture that’s right for your little one and stay close while they eat.

Flavor Variations
- Sweet potato salmon nuggets: Swap the carrot for mashed sweet potato. It’s extra creamy and a little sweeter.
- Pumpkin salmon nuggets: Use ½ cup pumpkin puree instead of the carrot for a cozy fall twist.
- Green veggie nuggets: Swap half the carrot for finely chopped steamed broccoli or spinach. Little green flecks, very sneaky.
- Canned salmon shortcut: Use 2 cans (6 oz each) of drained salmon and skip step 1 completely. Mash any soft canned bones right in for a bonus boost of calcium!
- Cheesy salmon nuggets: Mix ¼ cup shredded mild cheddar into the nugget mix.
- Herby version: For older kids and grown-ups, add a little fresh dill, parsley or chives.
- Breadcrumb version: Not an oat family? Swap the oat crumb for whole wheat panko.
- Gluten free: Use certified gluten-free oats for both the oat flour and the crumb.
Nutrition Highlights
These aren’t your average freezer aisle nuggets! A serving of 4 nuggets packs roughly 18 to 20 grams of protein, mostly from the salmon and egg. You also get omega-3 DHA from the salmon and flaxseed, vitamin D and B12 from the salmon, vitamin A from the carrots, and fiber from the oats and flax. That’s a whole lot of good stuff hiding inside one crunchy little nugget!
Nutrition is an estimate based on 6 servings and will vary depending on the specific ingredients you use.
How to Store and Freeze Salmon Nuggets
Fridge: Store cooked nuggets in an airtight container for up to 3 days. Reheat in the air fryer at 375°F for 3 to 4 minutes to bring back the crunch (the microwave works too, they just won’t be as crispy).
Freeze before cooking (best for meal prep): After shaping and coating the nuggets, place them on a parchment-lined tray and freeze for 1 to 2 hours until firm. Transfer them to a freezer bag and store for up to 3 months. Cook straight from frozen, no thawing needed:
- Air fryer: Spray lightly with oil and cook at 390°F for 10 to 12 minutes, flipping halfway.
- Oven: Bake at 400°F for 15 to 18 minutes, flipping halfway.
Freeze after cooking: Let the cooked nuggets cool completely, flash freeze them on a tray, then bag them. Reheat from frozen at 375°F for 5 to 7 minutes. They keep for 2 to 3 months.
Leftover oat flour: Store it in a jar and use it for pancakes, muffins or your next batch of nuggets.
Frequently Asked Questions
Can I make salmon nuggets for toddlers without an air fryer? Yes! Bake them on a parchment-lined tray at 400°F for 12 to 15 minutes, flipping halfway, until golden.
Can I use canned salmon? Absolutely. Two 6 oz cans, drained, is about the same as 1 lb of cooked salmon. Just skip the cooking step and flake it straight into the bowl.
Can I use leftover salmon? This recipe was practically made for leftovers! Any plain cooked salmon works, just keep heavily seasoned or saucy salmon for the grown-ups.
Do the nuggets taste fishy? Not really! The carrot adds sweetness, the lemon zest keeps things fresh and the crunchy oat crumb steals the show. Even my fish-skeptical crew eats them happily.
What is oat flour and do I need to buy it? Oat flour is just rolled oats blended until fine and powdery. Blend ½ cup of rolled oats for 30 to 60 seconds and you’ll have more than enough. No special trip to the store required.
Can I use breadcrumbs instead of the oat crumb? Yes, whole wheat panko works great. The oats just give a little extra fiber and a lovely nutty crunch.
Why are my nuggets falling apart? Usually the mix is a little too wet. Add more oat flour 1 tablespoon at a time and make sure you chill it before shaping.
What age can babies eat salmon nuggets? Babies can usually have salmon from around 9 months once fish and egg have been introduced. Serve finger-length strips for baby-led weaning or mash a nugget for younger babies.
What do you serve with salmon nuggets? We love them with plain Greek yogurt mixed with a little lemon juice for dipping, ketchup, steamed peas, cucumber sticks or some fruit on the side.
