Okay let me tell you, if you have ever tried to convince a toddler that cauliflower is a good idea, you already know how that goes! So we are not going to tell them. We are going to sneak it into the one food that has never once been turned down in the history of small humans, which is pizza, and we are going to hide a whole zucchini in there too while we are at it because that is just the kind of moms we are around here.
These little cauliflower pizza bites are basically my love language. They are healthy, they are low key packed with veggies, they bake up in a mini muffin tray so they are the perfect grab-and-go size for tiny hands, and they freeze beautifully which means future-you gets a break too. That is a win, a win, and honestly a third win because you get pizza. Everybody wins.
The best part? This recipe is completely interchangeable. That is my whole thing! I am not going to send you running to three different grocery stores for some fancy ingredient you use once and then it sits in your pantry judging you. Use what you have. Only have Italian herbs and no oregano? Great, use that. Kids hate olives? Throw on whatever they do love. This recipe bends to your life, not the other way around.
Why You Are Going to Love These Cauliflower Pizza Bites
They are sneaky in the best way. There is half a head of cauliflower and two whole zucchinis hiding in here and your kids will have absolutely no idea. All they taste is cheesy, pizza-y goodness.
They are the perfect little size. Making them in a mini muffin tray means you get about 24 bite-sized pizzas that are made for little hands and baby-led weaning. No giant floppy slices, no mess disaster, just pop-in-your-mouth cuteness.

Ingredients You Will Need
Here is everything that goes into these little guys. Nothing scary, nothing fancy, I promise.
For the crust:
- About half a head of a big cauliflower (this should give you around 2 1/2 cups once you grind it up in the food processor)
- About 2 small zucchinis (this should give you around 1 cup ground up)
- 2 large eggs
- 3/4 cup grated mozzarella
- 1 tsp salt
- 1 tsp oregano OR Italian herbs, whatever you have living in your pantry right now
- 1 tsp garlic powder
For the topping:
- 1/4 cup pizza sauce
- 3/4 cup grated mozzarella
- Olives (this is my go-to!) or honestly whatever you and your kids love, think mushrooms, salami, pepperoni, a little diced bell pepper, you know your crew
A quick little note on the veggies before we dive in. Once you grind and cook and squeeze all that moisture out (and we are going to squeeze a LOT), your 2 1/2 cups of cauliflower shrinks down to about 1 1/4 cup of dry cauliflower, and that whole cup of zucchini basically vanishes down to about 1/4 cup. That is completely normal! Vegetables are mostly water and drama. Do not panic when it looks like way less than you started with, that is exactly what we want.
How to Make Cauliflower Pizza Bites
Step 1: Preheat and prep. Get your oven going at 425°F (210°C) and grab a mini muffin tray. Give each little cup a good spritz of cooking spray or a wipe of oil so nothing sticks and ruins your whole afternoon.
Step 2: Rice your veggies. Wash your cauliflower, pull off the green leaves, and chop it into florets. Pulse it in the food processor until it looks like fine little rice grains. You want about 2 1/2 cups. Do the same with your zucchinis, aiming for about 1 cup.
Step 3: Nuke the cauliflower. Dump the cauliflower rice into a microwave-safe bowl and microwave on high for about 5 minutes. No need to cover the bowl, we are keeping this easy! (Leave the zucchini raw for now, it does not need microwaving.)
Step 4: Let it cool, and here is my favorite hack. You need to let that cauliflower cool down before the next step, and waiting around is not really our vibe. So dump it out onto a clean kitchen towel and spread it out nice and thin. Then, if you happen to have a stroller fan hanging around (and let us be honest, what mom does not), clip it right next to the cauliflower and let it blow. It cools it down so much faster, because who has time to just stand there watching cauliflower cool when there is pizza to be made!
Step 5: Squeeze out ALL the liquid. This is the most important step, so do not skip it! Once your cauliflower is cool, wrap it up in that kitchen towel (or a cheesecloth) and squeeze like you mean it. Get out as much liquid as you possibly can. You should end up with around 1 1/4 cup of dry cauliflower. Then do the exact same squeeze with your raw grated zucchini, which will shrink way down to about 1/4 cup. Squeeze, squeeze, squeeze! Dry crust equals crispy crust, and soggy is nobody’s friend.
Step 6: Mix your crust. In a big bowl, combine your squeezed-dry cauliflower and zucchini with the eggs, 3/4 cup mozzarella, salt, your oregano or Italian herbs, and garlic powder. Mix it all up until everything is evenly combined and holding together.
Step 7: Press into the tray. Take a spoonful of the mixture and press it firmly into each greased mini muffin cup, pushing it up the sides a little to form a tiny crust. Really pack it in there so they hold their shape. You should get about 24 mini crusts out of this.
Step 8: Bake the crusts. Pop the tray in the oven and bake for about 8 to 10 minutes, or until the little crusts are set and lightly golden around the edges.
Step 9: Add your toppings. Pull them out and spoon a little pizza sauce into each crust, then sprinkle on that other 3/4 cup of mozzarella and add your olives (or whatever fun toppings your kids are into today).
Step 10: Final bake. Back in the oven they go for another 5 to 7 minutes, until the cheese is all melted and bubbly and gorgeous.
Step 11: Cool and serve. Let them hang out in the tray for a few minutes to cool and firm up before you gently pop them out. Serve them warm and watch them disappear!
Tips for the Best Cauliflower Pizza Bites
Squeeze harder than you think you need to. I know I already said it, but I am saying it again because it matters that much. The drier your veggies, the better your crust holds together. Wet crust is crumbly crust.
Let the crusts cool before topping if you have the patience. They firm up as they sit, so a couple minutes of cooling makes them much easier to work with.
Pack the muffin cups firmly. Loosely pressed crusts fall apart. Really press that mixture into the bottom and up the sides.
Fun Variations to Try
The whole point of these is that you make them your own, so here are some ideas to get you going:
Little pizza party bar. Set out a few topping bowls and let the kids build their own. Instant activity AND dinner, you genius.
Pepperoni bites. Swap the olives for mini pepperoni if that is more your crew’s speed.

- 3/4 cup grated mozzarella
- 1 tsp salt
- 1 tsp oregano OR Italian herbs (whatever you have in your pantry!)

For the topping:
- 1/4 cup pizza sauce
- 3/4 cup grated mozzarella
- Olives, or any toppings your kids love (mushrooms, pepperoni, salami, diced peppers, etc.)
Instructions
- Preheat your oven to 425°F (210°C). Grease each cup of a mini muffin tray with cooking spray or oil.
- Wash the cauliflower, remove the green leaves, and cut into florets. Pulse in a food processor until it looks like fine rice grains, about 2 1/2 cups. Do the same with the zucchini, about 1 cup.
- Place the cauliflower rice in a microwave-safe bowl and microwave on high for about 5 minutes. No need to cover it! Leave the zucchini raw.

- In a large bowl, combine the squeezed cauliflower and zucchini with the eggs, 3/4 cup mozzarella, salt, oregano or Italian herbs, and garlic powder. Mix until evenly combined.
- Press a spoonful of the mixture firmly into each greased muffin cup, pushing it up the sides to form a mini crust. You should get about 24.
- Bake for 8 to 10 minutes, until set and lightly golden around the edges.
- Remove from the oven and spoon a little pizza sauce into each crust, then top with the remaining 3/4 cup mozzarella and your olives or chosen toppings.
- Return to the oven and bake for another 5 to 7 minutes, until the cheese is melted and bubbly.
- Let cool in the tray for a few minutes before gently removing. Serve warm!

Squeeze the veggies as dry as you possibly can. This is the number one key to a crust that holds together instead of going soggy!
