Easy 3 ingredient cheesy carrot waffles! A quick 10-minute baby-led weaning lunch, toddler snack, or dinner made with just shredded cheese, grated carrots, and eggs. Freezer-friendly, toddler-approved, and endlessly flexible.
Ingredients
- 1 cup shredded cheese (cheddar, mozzarella, or whatever you have on hand)
- 1 cup grated carrots (about 12 baby carrots)
- 2 eggs
- Optional: garlic powder, onion powder, or a pinch of salt to taste (skip or go easy on salt for babies under one)
Instructions
- Preheat your waffle maker and grease it well so nothing sticks.
- In a bowl, combine the shredded cheese, grated carrots, eggs, and any optional spices. Mix until well combined.
- Spoon the mixture into the waffle maker and cook until golden and crispy.
- Let the waffles set for a minute before opening the lid, then carefully remove.
- Allow to cool slightly, then cut into strips or wedges for babies, or serve whole for toddlers.
Notes
These freeze beautifully! Cool completely, freeze flat on a tray, then transfer to a freezer bag. They’ll keep for up to 3 months. Reheat straight from frozen in the toaster, air fryer, or oven until warm and crisp.
Store leftovers in an airtight container in the fridge for up to 3 days.
