Description
Crispy, cheesy, sneaky-veggie crackers made with just cheddar and carrots in the microwave. The easiest healthy toddler snack, ready in 5 minutes with no flour, no eggs, and no oven!

- 1 cup grated cheddar cheese
- 1/3 cup finely grated carrot (about 1 medium carrot)
Instructions
- Grate the cheddar and carrot, using a food processor with a grating attachment or a box grater.
- Wrap the grated carrot in a clean kitchen towel and squeeze out as much moisture as possible.
- In a bowl, stir the squeezed carrot and cheddar together with a spoon until combined.
- Cut a piece of parchment paper to fit your microwave. Spread the mixture into a single, very thin layer, letting small gaps form.
- Microwave on high for 2 to 3 minutes, starting at 2 minutes. If it isn’t lacey and crisp with a few brown spots yet, continue in 30-second intervals.
- Leave on the parchment for 1 minute to cool and harden, then transfer to a paper-towel-lined plate to absorb excess oil.
- Repeat with remaining mixture, break into pieces, and serve.
Notes
- If the crackers don’t firm up after cooling, they’re undercooked (microwave in 30-second bursts) or the layer was too thick (spread thinner next batch).
- Store in an airtight container or ziplock bag lined with a paper towel, on the counter, for about 3 days.
- Best suited to toddlers and up, as the crackers are firm and crunchy. Always supervise snack time.
